The mantra of energy saving no longer spares any field.
And that’s a great thing!
Even in professional kitchens, people are becoming increasingly attentive and sensitive to the issue of energy saving.
And in aspiration?
Well, the compensating hood is a tool that allows for good energy savings: it safeguards the quality of ventilation and captures cooking fumes.
In this case, two elements influence energy saving:
– It significantly reduces the expulsion of thermally treated air for heating/cooling the kitchen.
Very briefly: the kitchen is always air-conditioned, bringing hot or cold air into the room, to heat or cool the environment depending on the season. In the presence of a simple aspiration hood, the system also sucks in the air introduced by the closest air conditioning systems, to avoid creating a vacuum in the environment. If you have a compensating hood, if it is properly studied and designed, the extraction fan will also draw in the air introduced by the intake fan that has not been heat treated, so there is no waste of energy.
The reduction of the outlet surface, causing a strong increase in the speed of the air inside the hood, creates the so-called inductive effect, which drags the fumes and odours towards the filters with minimal dispersion, considerably increasing the capture efficiency.
That said… rely on experts for the design and installation of your extraction systems.
