Ok, it’s not that extraordinary, I agree.
Yet, I believe it’s still undervalued in the catering industry today.
And there are mainly three reasons!
1) As it comes to the so-called heavy cooking (such as frying, braising, fish or meat grilling, and whatnot): it significantly limits the dispersion of smoke into the environment. Avoiding, consequently, that equipment, other appliances, or even the walls, get dirty or greased.
2) Energy saving! By limiting the airstream that can move the fumes going from the cooking area to the hood, the motor can be adjusted to get a lower flow-rate. If there is nothing obstructing the fumes in their vertical ascension, in fact, not much power is needed!
3) The stainless steel side walls provide a good degree of thermal insulation, slowing down and hindering the propagation of cooking heat. If a refrigerated cabinet or freezer is positioned nearby, the side walls limit the greater energy expenditure of the latter. Of course, it would be better to place the refrigerator away from heat sources, but we all know that lack of space is a terribly common thing in professional kitchens!
