There are two most common filtration systems in the professional catering air-extraction industry: mesh filters and baffle filters.
You can also find the latter as “labyrinth” filters, but don’t let this wording baffle you: they are baffle filters.
Ok, also today, I made my terrible pun, now I can move on…
Until a few decades ago, almost exclusively mesh filters were used.
Nowadays, 95% of hoods are built with labyrinth filters. Obviously, that is due to their advantages, which in any case are not so overwhelming as to cannibalize even the other 5% of sales.
But let’s see what their pros and cons are, shall We?
The baffle filter has a higher oil mist-stopping power than the mesh filter. Furthermore, the labyrinth filter can act as a limit to the passage of flames beyond the hood, thus making an excellent contribution to limiting the fire hazard.
Baffle filter, however, creates greater pressure drops, as it offers more resistance to the passage of air: which makes it not extremely efficient when compared to its alternative.
And another small flaw is its higher cost. Of course, if cleaned regularly the baffle filters last almost forever, so in the long run they will repay the initial investment!
