Frying Fumes

An old Italian proverb goes:

“If you fry it, even a shoe is tasty”.

Let’s face it: we are all crazy about the crunchy breading and the moist and tasty filling that frying gives to foods.

Alas, the fumes resulting from frying are not healthy.

And I’m not just talking about the smell.

In fact, there are recent scientific studies and experiments (HERE one of the most exhaustive) in which the presence of carcinogenic components such as polycyclic aromatic hydrocarbons (PCH) and trans-2,4-decadienal (tt-DDE) has been demonstrated in the fumes released from heated oil.

Now, as it comes to the smell, at your place you might try what nonna used to do: heating in a pan a bit of water whit some laurel leaves in it.

On the other hand, if you run a professional kitchen, concerning the fumes or the odours… for goodness sake, equip yourself with a valid extractor hood!
