Do you know what serendipity means?
Quite simply, it’s an unexpected stroke of luck that happens when you make a pleasant discovery while you’re doing or looking for something else.
This is not due only to mere chance, but to a mixture of luck, sagacity and resourcefulness.
The word was coined in the 18th century by an English writer, Horace Walpole, with reference to an ancient Persian fable: The Three Princes of Serendip.
The three protagonists of the story, thanks to their ability to observe and deduce, were able to obtain results even from apparently ignorable events.
All this preamble to say that cheese is an example of serendipity.
At least according to a legend…
An Arab merchant had to do business in a city across the desert.
To prepare for the long journey on the back of the camel, he put some milk in saddlebags made from sheep’s intestines, and finally went on his way.
Then the heat of the desert, the movement of the camel, the enzymes on the sheep’s stomach that acted as a curdling agent…
Upon arrival, that milk had turned into cheese!
Today, fortunately, cheese is produced in a less… rustic way!
