There are two kinds of people in the world. Those who leave the pizza crust on the plate, and those who know how to enjoy life!
All kidding aside, the pizza crust is more than the mundane “edge.”
First of all, it is a distinctive character of the Pizza according to the Neapolitan tradition: soft, well leavened and honeycombed, between 2 and 3 cm high.
Moreover, the crust can also be stuffed. Personally, I’d suggest ricotta cheese for that.
And eventually, its name in Italian, cornicione (literally “cornice”) recalls a classical architectural element.
I mean, how can you possibly get rid of it??
