I’m gonna tell you something we’ve been knowing our whole life: “warmer food tastes better than cold”.
Yeah, of course.
But why?
Trying to succeed in the difficult task of not being terribly boring: when we ingest food, taste buds send a signal to the brain (via the channels of the TRPM5 proteins).
A team of researchers in Belgium have discovered that the aforementioned Trpm5-channel is highly sensitive to changes in temperature.
“At 15 ºC the channel scarcely opens, whereas at 37 ºC its sensitivity is more than 100 times higher. The warmer the food or fluid in the mouth, the more TRPM5 reacts and thus the stronger the electrical signal sent to the brain”.
So, in conclusion: the warmer is the food (reasonably speaking), the more intense is our taste perception.
Open wide those TRPM channels with the Inox Bim thermal equipment.
Or cool it with the refrigeration equipment, in case you wanna go against the “Mainstream”.
